Chicken lollipop is one of the most loved chicken recipe in India. It is an Indo-Chinese recipe. A flavourful and an uncomplicated dish made without any hassle within few minutes. This is one of the best chicken snack or starter recipe. Chicken lollipop, one dish that has become a true Indian savour. A favourite with young and old, this chicken dish is a popular party starter. Especially kid’s favourite and even adults also loves this recipe.

Preparation

It is very simple but the hardest part for beginner is to form the chicken lollipops from chicken wings. The important thing is to get the chicken marination and frying right, so that the drums of heaven turn out crispy with only a thin coating. You may customise the sauce as per your taste. Just make sure it has a sticky and thick consistency before adding the fried lollipops. If you are making a large batch, you can fry the lollipops and make the sauce in advance. Then you can re-fry the lollipop at a high temperature for a minute, re-heat the sauce, and toss to coat just before serving. This is the only way to ensure the lollipops are crispy when you serve them. It’s a best appetiser for everyone. Nothing can beat this chicken starter till date.

This recipe is very easy to make at home. The lollipops are made from chicken wings with the skin on it. The meat is scooped down and the bone cleared to hold. Each chicken wing will yield 2 chicken lollipops. You can buy pre-made lollipops from the chicken store or online. But technique is very simple and we can easily make it ourselves. One more thing, I have used Kashmiri red chilli powder for the recipe to impart the nice red colour but you can use regular chilli powder as well. It is a kid friendly recipe and kids love eating things that they can pick up and bite, which make these super convenient. You can reduce the spice in this to make these for your toddler.

Ingredients

  • 1st marination
  • Chicken- 500 gms

  • Dark soya sauce- 1 tsp

  • White vinegar- 2 tbsp

  • Kashmiri red chilli powder- 1 tbsp

  • Ginger garlic paste- 2 tbsp

  • Black pepper powder- 1 tsp

  • Salt- 1 tsp

  • 2nd marination
  • Cornflour- 1/4 cup

  • Maida- 3tbsp

  • Egg- 1

  • Food colour- a pinch of (its optional)

  • For frying
  • Oil

  • Other ingredients
  • Ginger finely chopped- 1 tbsp

  • Garlic finely chopped- 1 tbsp

  • Onion finely chopped- 3 tbsp

  • Spring onion chopped- 3 tbsp

  • Schezwan sauce- 3 tbsp

  • Soya sauce- 1 tbsp

  • Tomato ketch up- 2 tbsp

  • White vinegar- 1 tsp

  • Corn flour slurry- 3/4 tsp mixed with 4 tbsp water

  • Oil- 4 tbsp

Directions

  • First clean the chicken lollipops. Marinate the lollipops with the 1st marinate items, get a large bowl, add chicken lollipops, white vinegar, Kashmiri red chilli powder, ginger garlic paste, black pepper powder, soya sauce and salt into it, mix well and set aside for 30 minutes.
  • Now for 2nd marination, add cornflour, maida and egg into the chicken and mix well and set aside.
  • Now heat oil in a pan for deep frying the lollipops.
  • Drop the battered lollipops one by one in hot oil. Do not move for 2 minutes and then keep stirring to give a golden brown colour. nKeep frying for another 4 – 5 minutes till the chicken is cooked and fried golden.
  • Remove on a plate.
  • These fried lollipops can also be eaten at this stage.
  • For making drums of heaven
  • Heat oil in a kadhai and add the chopped ginger and garlic. Fry it for 30 seconds and then add the chopped onions.
  • Fry it on high flame for a minute till onions are soft. Now add the schezwan sauce, give a mix and then add the soya sauce. Then add the tomato ketch up.
  • Now add vinegar and saute on medium flame for a minute till the sauce is smooth and everything is mixed well.
  • Then add the corn slurry and keep cooking it for another 30 seconds till the sauce will be thick and smooth.
  • Now add the fried lollipops and stir fry for 2 minutes with the sauce to coat it well.
  • Garnish with chopped spring onion and serve hot.
