Ingredients

  • For batter
  • Refined floor- 1 cup

  • Corn flour- 1/2 cup

  • Salt to taste

  • Black pepper- 1 tsp

  • Water as required

  • Vegetables
  • For batter

  • Black pepper- 1 tsp

  • Vegetables
  • Carrot- 1/2 cup (diced)

  • Mushroom- 1/2 cup

  • Potato- 1/2 cup (diced)

  • Capsicum- 1/2 cup(diced)

  • Beans- 1/2 cup

  • Paneer cubes- 1/2 cup

  • For tossing
  • Oil as required

  • Chopped onion- 2 large

  • Chopped garlic- 1 tbsp

  • Chopped ginger- 1 tsp

  • Green chilil- 2 nos

  • Szechwan sauce- 2 tbsp

  • Tomato sauce- 2 tbsp

  • Chilli sauce- 1 tbsp

  • Soya sauce- 1 tbsp

  • Salt to taste

  • Sesame seeds for garnishing

  • For frying vegetables
  • Refined oil

Directions

  • In a mixing bowl add refined flour, corn flour, salt as required and black pepper. Whisk well to prepare a smooth and thick batter.
  • Add all the vegetables in the batter, mix and coat well.
  • Heat oil for frying, add the coated vegetables and fry it on high flame. Remove it on absorbent paper and keep aside.Crispy Veg Step 1
  • Now heat oil in a deep nonstick pan, then add chopped garlic, ginger, green chillies and chopped onions and sauté them on a high flame for a minute.Crispy Veg Step 2
  • Then add Szechwan sauce, tomato sauce, chilli sauce, soya sauce and salt as per taste and saute it on high flame for a minute. Crispy Veg Step 3
  • Add all the fried veggies and toss well to ensure the fried veggies are coated well with the sauce. Crispy Veg Step 4
  • Now sprinkle some sesame seeds on the top for garnishing. Serve hot and crispy.Crispy Veg Step 5

Notes

  • Serve crispy veg immediately or it may turn soggy.
