Dalma Recipe – Odisha cuisine, is a simple and traditional recipe from Odisha. There are several benefits of cooking this dish. Firstly, it is a very healthy dish because of a lot of vegetables and lentils used in preparing the dish. Hence it makes the food full of vitamins, protein and minerals required for the human body.

Moreover, this Dalma recipe – Odisha Cuisine also doesn’t contain any spices or oil. Secondly, it is very easy and quick to cook. And served as the side dish along with rice, roti and paratha.

It is usually cooked in toor dal with a variety of vegetables however, it could also be made in Moong dal or combination of both toor and moong dal. Pumpkin, Yam, raw Banana, Eggplant, Radish, Potato and raw Papaya are the main vegetables that is used for making dalma. I do add a huge variety of veggies in the dish, you can also add the vegetables which you like.

There are many different varieties of dalma recipes. However, I will be explaining the most commonly cooked recipe of the Odisha dish Dalma. Moreover, this method of preparation is easy to cook and is full of flavours.

Since I am from Odisha, I also know varieties of different dalma recipes. But will keep the other recipes for different posts. Dalma is one of favourite dish of my son and mine too. It is a healthy recipe as well and is good for all ages of people. So try the recipe today at your home.

Dalma in Odisha

It is a commonly served dish in most of the Odia homes. Because of being a common dish across the state, this dish could be easily called as king of all the side dishes in Odisha. Odia people generally prefer it to have with hot raw rice (known as Arua Bhata in Odia). The combination of raw rice with ghee and Dalma tastes delicious and yummy.

Dalma is cooked in earthen vessels with the authentic recipe in temples. It is also part of Chhapan Bhog served in Puri Jagannath Temple. It is cooked as Prasad in many of the temples of Odisha.

Roast the dried red Chilies and Cumin seeds on a pan. Put them into the mixer and mix it properly (Jeera Lanka gunda as we say it in Odia). Store the powdered spice in an air tight container and use it in Dalma as when you plan to cook the dish.

Ingredients

  • Toor dal (Harada dali in Odia) – 2 cup

  • Pumpkin – 250 gms

  • Potato – 200 gms

  • Brinjal/ eggplant – 100gms

  • Beans – 100gms

  • Raw banana – 1 big

  • Yam – 100gms

  • Radish – 100gms

  • Raw papaya – 200gms

  • Tomato – 2 big

  • Chopped coriander leaves

  • Panch foran / pancha futana – 1 tbsp ( cumin, mustard seed , saunf , black til , fenugreek seeds )

  • Dry red chilly

  • Hing as per taste

  • Ghee – 2 tbsp

  • Turmeric powder – 1/2 tbsp

  • Ginger finely chopped – 2 tsp

  • 1 bay leaf

  • Grated Coconut – 1/2 cup (its optional )

  • Salt as per taste

Directions

  • Firstly, we have to soak the dal for 30 mins to make it soft.
  • Then, wash the dal properly. Also, wash the vegetables and dice them into medium pieces.
  • Put the dal, cut vegetables, tomatoes and add 3 glasses of water to the pressure cooker. Also add turmeric powder and salt as needed. Then cook it on low flame till the first whistle. After the whistle, keep the pressure cooker aside.
  • Now in another pan, we have to prepare the tadka. Put the pan on the stove. Add ghee to the pan and heat it for some time. Then add panch phoran, chopped Ginger, dried red Chili, 1 bay leaf and hing and fry it for 1mins.
  • Add the tadka to the dal mixture in the pressure cooker and mix well.
  • Then cook it for 5 to 7 mins and switch off the flame. Then we had already made the dry roast powdered spice. Add 1 tbsp of the powdered spice (that you have already made earlier) to the Dalma and cover it for sometime. So that the aroma of the spice remains inside the vessel.
  • For garnishing, sprinkle some coriander leaves on the Dalma. You could also add some grated coconut as well.
  • Serve the delicious dish along with hot rice or chappatis.
